Fedi friends, I am in possession of a pair of lovely plantains at the yellow-black stage of ripeness. Not dark enough for maduros, too dark for tostones.

I want to prepare these for part of our dinner tomorrow night, which will include grilled meats and spicy black beans (flavors will include lots of cumin, garlic, and coriander).
